Arepas con Carne Mechada y Queso
Thick griddled corn cakes filled with shredded beef and salty coastal cheese — the Colombian street breakfast from the Caribbean coast.

Ingredients
- For arepas: 2 cups masarepa, 1.5 cups warm water, 1 tsp salt, 1 tbsp butter
- For carne mechada: 400g flank steak boiled and shredded, 2 tomatoes diced, 1 onion diced, 3 cloves garlic, 1 tsp cumin, salt
- 100g queso costeño (salty coastal cheese), crumbled
Instructions
- Cook shredded beef with tomato, onion, garlic, and cumin until dry. Season.
- Mix masarepa with water, salt, and butter into a soft dough.
- Form into round patties about 1cm thick.
- Griddle on a hot buttered comal until golden spots appear (5 min per side).
- Split open the hot arepa.
- Fill with carne mechada and crumbled cheese.
