Asado Paraguayo

Paraguayan barbecue is a social ritual. Meats are seasoned simply with salt and slow-grilled over charcoal or wood fires.

  1. 1. Rub the meat generously with coarse salt. 2. Prepare a charcoal or wood fire until the embers are white-hot. 3. Place the meat on the grill (parrilla), fat side down first. 4. Grill slowly for 1.5 to 2 hours, turning once. 5. Serve with warm, boiled cassava and optional chimichurri.
