  1. 1. Build a fire using hard wood (espillo or coronilla) to produce embers. 2. Rub the meat generously with coarse salt. 3. Once you have a bed of red-hot coals, spread them under the grill (parrilla). 4. Place the meat on the grill, starting with the bone side down. 5. Grill slowly for 1.5 to 2 hours, rotating coals as needed. 6. Serve with chimichurri and simple salads.
