Aseed
A traditional Yemeni comfort food — a smooth, dense porridge made from wheat flour and water, served with a rich meat broth and sometimes clarified butter.

Ingredients
- 2 cups whole wheat flour
- 4 cups boiling water
- 1 tsp salt
- Clarified butter (samn)
- Rich lamb or beef broth (marag)
Instructions
- Bring water and salt to a boil.
- Slowly add flour while whisking or stirring vigorously with a wooden paddle (meeshah) to prevent lumps.
- Cook on low heat, stirring constantly until the dough is smooth, elastic, and pulls away from the sides.
- Shape into a smooth mound in a bowl.
- Make a well in the center and fill with samn or broth.
- Eat by hand, dipping pieces of the warm dough into the broth.
