Ash-e Ghalamkar
A rich, golden-yellow soup made with turmeric, wheat, and herbs, traditionally served with a crispy flatbread called "ghalamkar" as a festive winter dish.

Ingredients
- 1 cup wheat berries
- 1/2 cup mung beans
- 1 large onion, sliced
- 1 tbsp turmeric
- 4 cups mixed herbs (parsley, cilantro, dill)
- 2 tbsp vegetable oil
- Salt, pepper
- Ghalamkar bread or crispy bread for serving
Instructions
- Soak wheat berries for 2 hours.
- Sauté onions with turmeric until deep yellow.
- Add wheat, mung beans, and water.
- Simmer for 1 hour until wheat is soft.
- Add chopped herbs and cook for another 20 minutes.
- Season well.
- Serve with pieces of crispy ghalamkar bread on top.
