Ash-e Ghalamkar

A rich, golden-yellow soup made with turmeric, wheat, and herbs, traditionally served with a crispy flatbread called "ghalamkar" as a festive winter dish.

Instructions

  1. Soak wheat berries for 2 hours.
  2. Sauté onions with turmeric until deep yellow.
  3. Add wheat, mung beans, and water.
  4. Simmer for 1 hour until wheat is soft.
  5. Add chopped herbs and cook for another 20 minutes.
  6. Season well.
  7. Serve with pieces of crispy ghalamkar bread on top.
