Asinsdesa (Latvian Blood Sausage)

A traditional winter sausage made with barley groats and blood, typically served with lingonberry jam and sauerkraut.

  1. 1. Boil the barley groats until soft. Let cool. 2. Sauté the diced fatback and onions until golden. 3. In a large bowl, mix the groats, blood, sautéed onions, and spices. 4. Stuff the mixture into cleaned natural casings, tying them into links. 5. Simmer the sausages in hot (not boiling) water for 15-20 minutes. 6. Prick with a needle to prevent bursting. 7. To serve, fry the sausages in a pan until crispy and serve with lingonberry jam.
