Atol de Piña
A tangy and sweet hot pineapple drink thickened with cornstarch or rice flour.

Ingredients
- 1 fresh pineapple, peeled and blended 4 cups water 1 cup sugar or panela 2 cinnamon sticks 2 tbsp cornstarch
Instructions
- In a pot, combine the blended pineapple (strained if preferred), water, sugar, and cinnamon. Bring to a simmer. Dissolve the cornstarch in a small amount of cold water and stir it into the pot. Cook over medium heat until the mixture thickens and turns glossy. Serve steaming hot.
