Bacalhau à Brás
Portugal's most famous bacalhau dish—a creamy scramble of shredded salt cod, golden julienned potatoes, and onions, garnished with black olives.

Ingredients
- 500g salt cod (bacalhau), soaked and shredded
- 500g potatoes, cut into matchsticks
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 6 eggs, beaten
- 1/2 cup extra virgin olive oil
- Black olives
- Fresh parsley, chopped
- Salt and black pepper
Instructions
- 1. Fry the matchstick potatoes in oil until golden and crispy. Drain. 2. Sauté onions and garlic in olive oil until soft. 3. Add the shredded cod and sauté for 5 minutes. 4. Mix in the fried potatoes. 5. Pour the beaten eggs over the mixture and cook on low heat, stirring constantly until the eggs are creamy and set (not dry). 6. Garnish with black olives and fresh parsley. Serve immediately.
