Banga Soup (Ami-edi)
A luxurious Delta-style soup made from the extract of palm fruits, flavored with traditional spices like Beletete and Oburunbebe stick.

Ingredients
- 1 kg Fresh Palm Fruits (or 800g canned palm fruit concentrate)
- Assorted Fish (Catfish, Dried Fish)
- Assorted Meats
- 1 tbsp Banga Spice (Beletete, Aidun fruit)
- 1 Oburunbebe stick
- 2 tbsp Ground Crayfish
- 1 bulb onion, chopped
- Seasoning cubes and salt
Instructions
- Boil palm fruits until soft, pound gently to extract oil, then mix with warm water and strain to get the palm fruit juice.
- Boil the juice until it thickens and oil starts to rise to the top.
- Add the meats, dried fish, banga spices, and the Oburunbebe stick.
- Simmer for 15 minutes, then add fresh fish and crayfish.
- Cook until the fish is done and the soup is thick. Remove the Oburunbebe stick before serving.
