Basler Mehlsuppe (Basel Flour Soup)

A traditional roasted flour soup from Basel, historically eaten during the city's carnival (Fasnacht).

Ingredients

• Flour
• Butter
• Beef bouillon
• Red wine
• Onions
• Gruyère cheese

Instructions

1. Roast the flour in a dry pan until brown and nutty
2. Add butter and onions, sauté
3. Gradually stir in bouillon and wine
4. Simmer for an hour
5. Top with grated cheese
