New Orleans Beignets

Puffy, square-cut deep-fried dough pieces served hot and buried under a mountain of powdered sugar.

Ingredients

Instructions

  1. Dissolve yeast and sugar in water; whisk in eggs and milk.
  2. Mix in flour and shortening to form a soft dough; let rise for 2 hours.
  3. Roll out dough to 1/4 inch thickness and cut into 2-inch squares.
  4. Fry in 370°F (188°C) oil until puffed and golden brown.
  5. Immediately toss in a bag with plenty of powdered sugar.
