Beshbarmak (Five Fingers)

The national dish of Kazakhstan, Beshbarmak is a communal platter of boiled meat served over wide, handmade noodles and topped with a savory onion sauce.

  1. 1. Boil meat in a large pot with salt for 2.5-3 hours until tender. Skim the fat. 2. Make dough from flour, eggs, and a bit of broth. Roll out very thin and cut into large squares. 3. Boil noodles in the meat broth for 5-7 minutes. 4. Thinly slice onions and simmer them in some of the hot broth fat (tuzdyk). 5. Place noodles on a large platter, top with shredded meat, and pour the onion tuzdyk over. 6. Serve with bowls of broth (sorpa).
