Beshbarmak (Five Fingers)
The national dish of Kyrgyzstan, Beshbarmak consists of boiled meat (traditionally horse or lamb) served over large, hand-cut noodles in a rich broth.

Ingredients
- 1.5 kg Lamb or Horse meat on the bone, 1 kg Flour, 2 Eggs, 2 Onions, 1 tsp Black Pepper, Salt, Water.
Instructions
- 1. Boil meat in a large pot with salt for 2 hours until very tender. Skim the fat. 2. Make dough from flour, eggs, and a little broth. Roll out thin and cut into large squares or rectangles. 3. Boil noodles in the meat broth for 5-7 minutes. 4. Thinly slice onions and simmer them in some of the hot broth fat (chyk). 5. Place noodles on a large platter, top with shredded meat, and pour the onion chyk over. 6. Serve with bowls of the remaining broth (shorpo).
