Bifana (Pork Sandwich)
The ultimate Portuguese street food: thin slices of pork marinated in garlic and wine, served in a crusty bread roll.

Ingredients
- 4 thin pork cutlets
- 4 papo seco (Portuguese rolls)
- Marinade: 1/2 cup white wine, 4 cloves garlic, 1 tbsp lard, 1 tsp paprika, 1 bay leaf, salt
- Yellow mustard and piri-piri sauce
Instructions
- 1. Marinate pork for at least 4 hours. 2. Sauté pork in its marinade and lard until tender and the liquid reduces to a rich sauce. 3. Lightly toast the rolls. 4. Stuff the meat into the rolls and pour extra sauce over it. 5. Serve with mustard and optional piri-piri.
