Biko

A rich and sticky rice cake made with glutinous rice, coconut milk, and dark brown sugar, topped with latik (fried coconut curds).

  1. 1. Cook the glutinous rice with 1.5 cups of water until nearly done. 2. In a large pan, simmer coconut milk and brown sugar until it thickens into a syrup. 3. Add the semi-cooked rice to the syrup. Stir constantly over low heat until the rice is fully cooked and the mixture is very thick and heavy. 4. Spread onto a tray or banana leaf. 5. Make latik: Boil coconut cream in a pan until it turns into oil and brown solids (curds) form. Drain curds. 6. Sprinkle the brown latik over the top of the biko.
