Quesabirria Tacos
The viral sensation: slow-cooked beef birria and melted cheese in tortillas, served with a side of rich consommé for dipping.

Ingredients
- 1.5 kg beef chuck or short ribs
- Marinade: dried guajillo, ancho, and arbol chiles, garlic, vinegar, cinnamon, cloves, ginger
- Corn tortillas
- Oaxacan cheese or mozzarella
- Diced onion and cilantro
Instructions
- Sear the beef, then braise in a pot with the chili marinade and enough water to cover for 3-4 hours until falling apart.
- Remove meat and shred. Reserve the flavorful cooking liquid (consommé).
- Dip a tortilla into the top layer of the consommé (the oily part) and place on a hot griddle.
- Add cheese and shredded meat to the tortilla. Fold and fry until crispy and cheese is melted.
- Serve with a small bowl of consommé topped with onion and cilantro for dipping.
