Quesabirria Tacos

The viral sensation: slow-cooked beef birria and melted cheese in tortillas, served with a side of rich consommé for dipping.

  1. Sear the beef, then braise in a pot with the chili marinade and enough water to cover for 3-4 hours until falling apart.
  2. Remove meat and shred. Reserve the flavorful cooking liquid (consommé).
  3. Dip a tortilla into the top layer of the consommé (the oily part) and place on a hot griddle.
  4. Add cheese and shredded meat to the tortilla. Fold and fry until crispy and cheese is melted.
  5. Serve with a small bowl of consommé topped with onion and cilantro for dipping.
