Bison and Root Vegetable Stew
A hearty prairie stew made with lean bison meat, slow-cooked with root vegetables and herbs.

Ingredients
- 2 lbs bison stew meat, cubed
- 2 tbsp flour
- 1 onion, chopped
- 3 carrots, chopped
- 3 potatoes, cubed
- 1/2 cup red wine or beef broth
- 3 cups beef stock
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 2 bay leaves
Instructions
- Toss bison with flour, salt, and pepper. Brown the meat in a large pot with oil. Remove meat. Sauté onions in the same pot until soft. Deglaze with wine/broth, scraping the bottom. Add tomato paste, herbs, and return the meat to the pot. Add beef stock. Simmer on low for 1.5 hours. Add carrots and potatoes
- simmer for another 30-40 minutes until meat and vegetables are tender.
