Bobotie
Cape Malay curried mince bake with a rich custard topping; often called South Africa's national dish.

Ingredients
- 1kg ground beef or lamb 2 onions, finely chopped 2 cloves garlic, minced 1 slice white bread, soaked in milk 2 tbsp curry powder 1 tsp turmeric 2 tbsp chutney (e.g., Mrs. Ball's) 2 tbsp raisins or chopped dried apricots 2 eggs 1 cup milk 4 bay leaves Salt and pepper to taste Optional: flaked almonds for topping
Instructions
- 1. Sauté onions and garlic until soft. Add the meat and brown until cooked through. 2. Stir in the curry powder, turmeric, chutney, raisins, and the squeezed-out soaked bread. Season with salt and pepper. 3. Spoon the mixture into a greased baking dish and press down firmly. Tuck 2 bay leaves into the meat. 4. Whisk the eggs and milk together. Pour this custard over the meat mixture. 5. Top with the remaining bay leaves and almonds if using. 6. Bake at 180°C (350°F) for 30-40 minutes until the custard is set and golden brown. 7. Serve hot with yellow rice and extra chutney.
