Boerewors
A traditional, spiced South African sausage; a non-negotiable essential for any "braai" (barbecue).

Ingredients
- 1.5kg beef, coarsely ground 500g pork, coarsely ground 200g bacon or pork fat, diced 2 tbsp coriander seeds, toasted and crushed 1 tsp ground cloves 1 tsp ground nutmeg 2 tbsp brown vinegar Salt and black pepper Natural sausage casings
Instructions
- 1. In a large bowl, combine the beef, pork, and fat. Mix gently to avoid overworking the meat. 2. Add the toasted coriander, cloves, nutmeg, salt, and pepper. Pour in the vinegar and mix well. 3. Let the mixture rest in the fridge for at least 2 hours to allow the flavors to meld. 4. Stuff the mixture into the prepared casings, forming long coils. Do not pack too tightly. 5. To cook: Coil the boerewors on a grill over hot coals (braai). Cook for about 10-15 minutes, turning once, until browned but still juicy inside. 6. Serve with pap or in a roll as a "boerie roll".
