Bolani
A crispy, thin-crusted flatbread stuffed with a variety of fillings, typically leeks (gandana), potatoes, or pumpkin, then pan-fried until golden.

Ingredients
- 3 cups All-purpose flour
- 1 cup Water
- 1/2 cup Oil
- Filling: 3 cups Gandana (Afghan leeks) or scallions, chopped
- OR: 2 cups mashed potatoes with green chilies and cilantro
- Salt, pepper, and red chili flakes
Instructions
- Make a basic dough with flour, water, and salt. Rest for 30 minutes.
- Roll out small balls of dough into very thin, large circles.
- Spread the seasoned leek or potato filling on one half of the circle.
- Fold the dough over to create a semi-circle and press the edges firmly to seal.
- Pan-fry on a hot griddle with a thin layer of oil until both sides are crispy and brown.
- Serve hot with a side of yogurt dip or cilantro chutney.
