Bolani

A crispy, thin-crusted flatbread stuffed with a variety of fillings, typically leeks (gandana), potatoes, or pumpkin, then pan-fried until golden.

  1. Make a basic dough with flour, water, and salt. Rest for 30 minutes.
  2. Roll out small balls of dough into very thin, large circles.
  3. Spread the seasoned leek or potato filling on one half of the circle.
  4. Fold the dough over to create a semi-circle and press the edges firmly to seal.
  5. Pan-fry on a hot griddle with a thin layer of oil until both sides are crispy and brown.
  6. Serve hot with a side of yogurt dip or cilantro chutney.
