A flaky, unleavened pastry from Izmir with Sephardic roots, traditionally served with hard-boiled eggs.

Ingredients

• Flour, water, oil
• Tahini (optional)
• Salt

Instructions

1. Knead a very elastic dough
2. Stretch dough until paper-thin
3. Fold into many layers with oil
4. Bake until flaky and dark golden
