Briam (Greek Roasted Vegetables)

The Greek version of Ratatouille — a medley of summer vegetables roasted slowly with plenty of olive oil and garlic until sweet and tender.

Instructions

  1. Slice all vegetables into thin rounds.
  2. Toss them in a large pan with olive oil, garlic, and oregano.
  3. Roast at 180°C for 90 minutes, tossing once halfway through.
  4. The vegetables should be caramelized and the oil should be flavorful.
  5. Serve with a large block of feta cheese.
