Bryndzové Halušky
Slovakia's national dish, consisting of small potato dumplings mixed with a unique tangy sheep cheese (bryndza) and topped with crispy fried bacon.

Ingredients
- 500g raw potatoes (finely grated), 200g all-purpose flour, 1 egg, 1 tsp salt, 250g bryndza cheese (or feta mixed with sour cream), 200g smoked bacon (diced), chives for garnish
Instructions
- 1. Finely grate the potatoes and mix with flour, egg, and salt to form a sticky dough. 2. Drop small pieces of dough into boiling salted water (using a haluskár or spoon). 3. Boil until the dumplings float, then cook for 2 more minutes. 4. Drain and immediately mix with crumbled bryndza. 5. Fry the diced bacon until crispy and pour over the dumplings. Garnish with chives.
