Buckwheat Kasha
The soul of Russian comfort food. Roasted buckwheat groats cooked until fluffy and nutty, usually served with a generous pat of butter.

Ingredients
- 1 cup roasted buckwheat groats (Grechka)
- 2 cups water
- 1/2 tsp salt
- 2 tbsp butter
- Optional: Sautéed onions and mushrooms
Instructions
- Rinse the buckwheat and toast it in a dry pan for 2 minutes until fragrant.
- Add water and salt. Bring to a boil.
- Cover tightly and simmer on low heat for 15-18 minutes until water is absorbed.
- Stir in butter, cover, and let rest for 10 minutes before serving.
