A hollowed-out quarter loaf of white bread filled with a rich, spicy curry; a Durban street food icon.
Cuisine: South Africa
Ingredients
- 1 quarter loaf of fresh white bread (unsliced) 200g mutton, chicken, or bean curry (intensely spiced) For the sambals: 1 onion (minced), 1 tomato (diced), fresh chili, vinegar, salt Fresh cilantro for garnish
Instructions
- 1. Hollow out the center of the bread quarter, keeping the "plug" (the scooped-out bread) for dipping. 2. Fill the cavity with hot, steaming curry, making sure some of the gravy soaks into the bread walls. 3. Top the curry with the bread plug. 4. Serve with a side of "carrot salad" or onion-tomato sambals. 5. Eat with your hands, starting from the top!
