Buñuelos Colombianos
Round, golden cheese fritters that are soft on the inside and crunchy on the outside.

Ingredients
- 2 cups grated salty cheese (Costeño or Feta/Cotija mix)
- 1 cup cornstarch
- 1/2 cup cassava flour
- 1/4 cup sugar
- 1 egg
- Milk as needed
- Oil for frying
Instructions
- 1. Mix cheeses, flours, sugar, and egg. 2. Add milk teaspoon by teaspoon until a smooth, non-sticky dough forms. 3. Form perfect spheres. 4. Fry in deep oil at a constant 320°F. The buñuelos should rotate on their own as they cook. 5. Drain and serve hot.
