Cepelinai (Zeppelins)
Lithuania's national dish; massive potato dumplings stuffed with spiced meat, served with a rich bacon and sour cream sauce.

Ingredients
- For the dough: 5kg potatoes (3.5kg raw, 1.5kg boiled) Salt to taste 1 tsp vitamin C or lemon juice (to prevent browning) For the filling: 500g ground pork 1 onion, finely chopped Salt, pepper, marjoram For the sauce: 200g smoked bacon, diced 1 onion, chopped 200ml sour cream
Instructions
- 1. Peel and boil 1.5kg of potatoes. Mash them while hot and let cool. 2. Peel and finely grate the remaining 3.5kg of raw potatoes. Squeeze out the liquid using a cheesecloth (save the starch that settles at the bottom). 3. Mix the raw potato mass, mashed boiled potatoes, and the saved starch. Season with salt. 4. Prepare the filling by mixing ground pork, onion, and spices. 5. Take a handful of dough, flatten it, place a spoonful of meat in the center, and wrap the dough around it into an oval "zeppelin" shape. 6. Carefully drop into boiling salted water and cook for about 25-30 minutes after they float to the surface. 7. Prepare the sauce by frying bacon and onions, then stirring in sour cream. 8. Serve hot with plenty of sauce.
