Char Siu (Cantonese BBQ Pork)
Iconic Cantonese roasted pork with a sweet, sticky red glaze.

Ingredients
- 1kg pork shoulder (butt)
- Marinade: 3 tbsp hoisin sauce, 2 tbsp soy sauce, 1 tbsp oyster sauce
- 2 tbsp honey, 1 tbsp maltose (or extra honey)
- 1 tbsp Shaoxing wine, 1/2 tsp five-spice powder
- 1 cube red fermented bean curd (for color and flavor)
Instructions
- Cut pork into long strips. Marinate for at least 4 hours, preferably overnight.
- Preheat oven to 200°C (400°F). Place pork on a wire rack.
- Roast for 30-45 minutes, basting with remaining marinade and honey every 15 minutes.
- The pork is done when caramelized and slightly charred at the edges.
- Rest for 10 minutes before slicing thinly.
