Chawanmushi (Savory Steamed Egg Custard)
A delicate, silky-smooth savory egg custard steamed in a cup, flavored with dashi and filled with shrimp, chicken, and shiitake mushrooms.

Ingredients
- 3 large eggs
- 450ml dashi stock (cooled)
- 1 tsp soy sauce, 1 tsp mirin
- 4 small shrimp, 4 slices chicken, 4 ginkgo nuts
- 4 slices kamaboko, 1 shiitake mushroom, sliced
Instructions
- Gently whisk eggs with dashi, soy sauce, and mirin. Strain through a fine mesh sieve to ensure no bubbles.
- Place shrimp, chicken, and mushrooms at the bottom of 4 individual cups.
- Pour the egg mixture over carefully.
- Steam on low heat for 12-15 minutes until set but still jiggly.
- The top should be smooth like glass. Garnish with mitsuba leaf.
