Cheong Fun (Rice Noodle Rolls)

Silky, thin rice noodle sheets rolled around fillings like shrimp or beef, served with a sweet soy sauce.

Ingredients

• Batter: Rice flour, wheat starch, water
• Fillings: Fresh shrimp, minced beef, or scallions
• Sweet Soy: Soy sauce, sugar, water, oil

Instructions

1. Pour a thin layer of batter onto a steaming tray.
2. Steam for 2 minutes until it sets into a sheet.
3. Add filling and steam for another 1 minute.
4. Carefully roll up the sheet. Slice into sections.
5. Pour sweet soy sauce over the rolls before serving.
