Chipá (Cassava Cheese Bread)
Small, chewy cheese rolls made with cassava (tapioca) flour and lots of hard cheese.

Ingredients
- 500g cassava starch (fécula de mandioca)
- 3 eggs
- 100g butter
- 200g semi-hard cheese (Mar del Plata or Gouda), cubed
- 100g hard cheese (Reggianito), grated
- 1/2 cup milk
- 1 tsp salt
Instructions
- Mix the starch with salt and the cheeses.
- Add butter, eggs, and milk slowly until a firm dough forms.
- Shape into small balls and place on a baking sheet.
- Bake at 200°C (400°F) for 15-20 minutes until slightly golden.
