Chipa (Cheese Bread)
Paraguay's most iconic cheese bread, made with cassava starch and cornmeal. It is chewy, naturally gluten-free, and has a unique flavor from anise seeds.

Ingredients
- 500g cassava starch (almidón), 100g cornmeal, 250g Paraguayan cheese (or mozzarella/feta mix), 3 eggs, 100g butter (room temperature), 100ml milk, 1 tsp anise seeds, 1 tsp salt
Instructions
- 1. Beat butter, eggs, and salt until creamy. 2. Add crushed anise seeds and crumbled cheese. 3. Gradually add cassava starch and cornmeal, adding milk as needed to form a soft dough. 4. Knead for 10 minutes until smooth. 5. Shape into small balls or rings (argollas). 6. Place on a greased tray and bake at 200°C (400°F) for 20-25 minutes until golden and firm.
