Churchkhela
Georgia's favorite natural candy—strings of walnuts or hazelnuts dipped into a thick, concentrated grape juice jelly.
Cuisine: Georgia
Ingredients
- Walnut halves or hazelnuts
- 2 liters grape juice (badagi)
- 1 cup wheat flour
- 1/2 cup sugar (optional)
Instructions
- 1. Thread nut halves onto long strings. 2. Boil grape juice until it reduces by half. 3. Gradually whisk in flour to the warm juice to form a thick, smooth paste (tatara). 4. Dip the nut strings into the hot paste until fully coated. 5. Hang the strings to dry in the sun or a warm room for 3-5 days until they are no longer sticky but still flexible.
