Clootie Dumpling
A traditional Scottish steamed pudding filled with dried fruit and spices, named after the "cloot" (cloth) it is boiled in.

Ingredients
- 500g self-raising flour
- 200g shredded suet
- 200g sugar, 200g currants, 200g raisins
- 1 tbsp ginger, 1 tbsp cinnamon
- 1 egg, 1/2 cup milk
- Custard for serving
Instructions
- Mix dry ingredients. Add egg and milk to form a firm dough.
- Scald a large piece of muslin cloth (cloot) and dust with flour.
- Tie the dough tightly in the cloth, leaving room for expansion.
- Boil in a large pot of water for 3 hours.
- Carefully unwrap and dry in a warm oven for 15 minutes to form a skin.
- Serve with custard or cream.
