Clootie Dumpling

A traditional Scottish steamed pudding filled with dried fruit and spices, named after the "cloot" (cloth) it is boiled in.

Ingredients

Instructions

  1. Mix dry ingredients. Add egg and milk to form a firm dough.
  2. Scald a large piece of muslin cloth (cloot) and dust with flour.
  3. Tie the dough tightly in the cloth, leaving room for expansion.
  4. Boil in a large pot of water for 3 hours.
  5. Carefully unwrap and dry in a warm oven for 15 minutes to form a skin.
  6. Serve with custard or cream.
