Cocido Quemado
A smoky yerba mate tea prepared by caramelizing sugar and mate leaves over hot coals before adding water.

Ingredients
- 1/2 cup yerba mate, 1/2 cup sugar, 1L water, hot coal (optional but traditional)
Instructions
- 1. Place yerba and sugar in a pot. 2. Traditionally, a red-hot coal is dropped into the sugar/yerba mixture to char it. 3. Stir until the sugar melts and smells smoky. 4. Carefully pour in boiling water. 5. Strain and serve black or with milk.
