Coxinha
A popular teardrop-shaped street food snack consisting of shredded chicken wrapped in a potato-based dough, breaded and deep-fried.

Ingredients
- 500g chicken breast, cooked and shredded
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp parsley, chopped
- 100g cream cheese (catupiry style)
- 3 cups chicken broth
- 3 cups all-purpose flour
- 2 tbsp butter
- 2 eggs, beaten (for breading)
- Breadcrumbs (for breading)
- Oil for frying
Instructions
- Sauté onion and garlic, add shredded chicken and parsley. Mix in cream cheese and set aside to cool.
- In a large pot, bring chicken broth and butter to a boil. Add flour all at once and stir vigorously until the dough pulls away from the sides.
- Knead the warm dough on a flat surface until smooth.
- Take a small piece of dough, flatten it, place a spoonful of chicken filling in the center, and shape into a teardrop.
- Dip in beaten eggs, then breadcrumbs.
- Deep fry in hot oil until golden brown.
