Coxinha Clássica
The iconic Brazilian teardrop-shaped fried pastry filled with shredded chicken and cream cheese — the most beloved Brazilian salgado.

Ingredients
- For dough: 500ml chicken broth, 500g flour, 1 tbsp butter, salt
- For filling: 400g cooked chicken, shredded; 200g cream cheese; 1 onion minced; garlic; cilantro; salt
- Breadcrumbs
- Oil for frying
Instructions
- Make dough: bring broth to boil with butter. Add flour all at once. Stir vigorously to form a smooth dough.
- Mix filling: cook onion with chicken. Add cream cheese and cilantro.
- Take a ball of dough. Press flat. Add filling.
- Shape into a teardrop (coxinha = little thigh).
- Coat in breadcrumbs.
- Fry at 175C until deep golden.
