Daifuku Mochi (Red Bean Rice Cake)
Soft, chewy rice cakes made from glutinous rice flour, stuffed with a sweet and smooth red bean paste (anko).

Ingredients
- 1 cup Shiratamako (glutinous rice flour)
- 1/4 cup sugar, 3/4 cup water
- 1 cup Anko (sweet red bean paste)
- Cornstarch for dusting
Instructions
- Mix rice flour, sugar, and water in a microwave-safe bowl.
- Cover and microwave for 2 minutes. Stir. Microwave another 1 minute until translucent and sticky.
- Dust a surface generously with cornstarch. Place the hot mochi on it.
- Divide mochi into 8 pieces. Flatten into discs, place a ball of anko in the center.
- Pinch the mochi closed and shape into a smooth ball.
