Daifuku Mochi (Red Bean Rice Cake)

Soft, chewy rice cakes made from glutinous rice flour, stuffed with a sweet and smooth red bean paste (anko).

  1. Mix rice flour, sugar, and water in a microwave-safe bowl.
  2. Cover and microwave for 2 minutes. Stir. Microwave another 1 minute until translucent and sticky.
  3. Dust a surface generously with cornstarch. Place the hot mochi on it.
  4. Divide mochi into 8 pieces. Flatten into discs, place a ball of anko in the center.
  5. Pinch the mochi closed and shape into a smooth ball.
