Damper (Bush Bread)
A traditional Australian soda bread originally baked in the ashes of a campfire.

Ingredients
- 3 cups self-rising flour 1/2 tsp salt 1 cup milk (or water) 80g butter, cubed
Instructions
- 1. Rub butter into the flour and salt until it resembles breadcrumbs. 2. Make a well and add milk. Mix until a soft dough forms. 3. Knead lightly and form into a round loaf. 4. Cut a cross on the top. 5. Bake at 200°C (400°F) for 30 minutes until golden and it sounds hollow when tapped. 6. Serve warm with plenty of butter and golden syrup (cocky's joy).
