Detroit Square Pepperoni

Ingredients
- High-hydration focaccia dough
- 12 oz Wisconsin Brick cheese, cubed
- 1/2 cup pepperoni (cup-and-char preferred)
- 1 cup thick pizza sauce
- Oregano and garlic salt
Instructions
- Press dough into a blue steel square pan and let rise.
- Place pepperoni directly on the dough.
- Distribute the cubed Brick cheese all the way to the edges of the pan.
- Bake at 500°F (260°C) for 15-20 minutes until the edges are black and crispy.
- Stripe the hot sauce over the top of the baked pizza ("racing stripes").
