Dinuguan
A savory, dark stew made from pork offal or meat simmered in a rich, spicy gravy of pig's blood, vinegar, and garlic.

Ingredients
- 1kg pork belly or offal, diced 2 cups fresh pig's blood 1/2 cup vinegar 1 onion, chopped 4 cloves garlic, minced 2 pieces long green chillies Salt and black pepper
Instructions
- 1. Sauté garlic and onion. Add the pork and cook until browned. 2. Pour in vinegar and bring to a boil (do not stir for 2 mins to cook out the raw vinegar taste). 3. Slowly pour in the blood while stirring constantly to prevent curdling. 4. Add chillies and simmer for 30-40 minutes until the sauce is thick and dark. 5. Season with salt and pepper.
