Dograma (Bread and Meat Salad)

An ancient Turkmen dish made by shredding fresh-baked chorek bread and boiled mutton, mixed with raw onions and spices.

  1. 1. Boil the mutton until extremely tender (about 2-3 hours). 2. Reserve the broth. 3. Shred the warm bread into small pieces by hand. 4. Shred the cooked meat into small bits. 5. Finely chop the onions and mix with salt and pepper. 6. Combine bread, meat, and onions in a large bowl. 7. Moisten with a little warm broth and serve.
