Douchi Chao Rou (Fermented Black Bean Stir-Fry)
A Cantonese classic — pork and vegetables stir-fried with pungent fermented black beans, garlic, and ginger.

Ingredients
- 300g pork belly, thinly sliced
- 2 tbsp fermented black beans (douchi), rinsed and chopped
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 1 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- 2 tbsp vegetable oil
Instructions
- Heat wok until smoking. Add oil and sear pork slices until browned.
- Push pork aside. Add garlic, ginger, and black beans. Stir-fry 30 seconds.
- Add bell pepper and toss everything together.
- Add soy sauce, wine, and sugar. Stir-fry 1-2 minutes until glossy.
- Serve immediately over steamed rice.
