Empanadas de Plátano con Leche

  1. Boil the unpeeled plantains in water until soft. Peel and mash them into a smooth paste. To make the filling, whisk milk, cornstarch, sugar, and vanilla in a saucepan over medium heat until it becomes a thick custard. Take a portion of plantain mash, flatten it, place a spoonful of custard in the middle, and seal into an oval shape. Fry until dark golden. Roll in sugar while hot.
