Empanadas de Plátano con Leche
Sweet ripe plantain dough filled with a creamy milk custard, fried and rolled in sugar.

Ingredients
- 3 very ripe plantains 1 cup milk 2 tbsp cornstarch 1/4 cup sugar 1/2 tsp vanilla Oil for frying Extra sugar for coating
Instructions
- Boil the unpeeled plantains in water until soft. Peel and mash them into a smooth paste. To make the filling, whisk milk, cornstarch, sugar, and vanilla in a saucepan over medium heat until it becomes a thick custard. Take a portion of plantain mash, flatten it, place a spoonful of custard in the middle, and seal into an oval shape. Fry until dark golden. Roll in sugar while hot.
