Ingredients: 1 kg starchy potatoes, cubed; 2 large onions, diced; 2 tbsp paprika; 1 tsp caraway seeds; 1 tbsp vinegar; Tomato paste; Vegetable broth; Sliced Debreziner or Frankfurter sausages (optional)

A thick, vegetarian-friendly (or with sausage) potato stew flavored with sweet Hungarian paprika and caraway.

Ingredients

1 kg starchy potatoes, cubed
2 large onions, diced
2 tbsp paprika
1 tsp caraway seeds
1 tbsp vinegar
Tomato paste
Vegetable broth
Sliced Debreziner or Frankfurter sausages (optional)

Instructions

1. Sauté onions in oil until very soft. 2. Stir in paprika and vinegar. 3. Add potatoes, caraway, and enough broth to cover. 4. Simmer until the potatoes are soft and the starch has thickened the sauce. 5. If using sausages, add them 10 mins before finishing. 6. Serve with a dollop of sour cream.
