Feter Meshaltet
An ancient Egyptian layered pastry made of paper-thin dough and plenty of clarified butter, baked until puffed and golden.

Ingredients
- 4 cups flour
- Water and a pinch of salt
- 1 cup clarified butter (samna) or butter, melted
- Oil for stretching
Instructions
- Knead flour and water into a very soft, elastic dough. Let rest.
- On an oiled surface, stretch a small ball of dough until it is transparently thin.
- Fold into a square, brushing each fold with samna.
- Repeat with several more balls, wrapping each new layer around the previous ones.
- Bake in a very hot oven until it puffs up and turns golden brown.
- Serve with honey, molasses, or salty cheese.
