An ancient Egyptian layered pastry made of paper-thin dough and plenty of clarified butter, baked until puffed and golden.

Instructions

  1. Knead flour and water into a very soft, elastic dough. Let rest.
  2. On an oiled surface, stretch a small ball of dough until it is transparently thin.
  3. Fold into a square, brushing each fold with samna.
  4. Repeat with several more balls, wrapping each new layer around the previous ones.
  5. Bake in a very hot oven until it puffs up and turns golden brown.
  6. Serve with honey, molasses, or salty cheese.
