Fish-Fragrant Pork Slivers (Yu Xiang Rou Si)
Stir-fried pork slivers in a "fish-fragrant" sauce—a balance of salty, sweet, sour, and spicy without any actual fish.

Ingredients
- 300g pork loin, julienned
- Wood ear mushrooms, bamboo shoots, bell peppers (all julienned)
- Sauce: 1 tbsp pickled chili (Er Jing Tiao), 1 tbsp soy sauce, 1.5 tbsp vinegar, 1 tbsp sugar, garlic, ginger
Instructions
- Marinate pork with soy sauce and cornstarch.
- Stir-fry pork until opaque. Add aromatics and pickled chili.
- Add vegetables and sauté. Pour in the sweet-sour-spicy sauce.
- Toss until everything is coated in a glossy, fragrant glaze.
