Fondue (Cheese Fondue)

  1. Rub the inside of a caquelon (fondue pot) with a garlic clove. Mix grated cheeses with cornstarch. Heat wine until simmering, then gradually add the cheese, stirring constantly in a figure-eight motion until smooth. Add kirsch and nutmeg. Keep warm over a portable stove and dip bread cubes using long forks.
