Fondue (Cheese Fondue)
The ultimate communal Swiss meal; a molten blend of aged cheeses and wine, served in a ceramic pot for dipping bread.

Ingredients
- Swiss cheese (Gruyère, Emmental), dry white wine, garlic, cornstarch, kirsch (cherry brandy), nutmeg, crusty bread cubes
Instructions
- Rub the inside of a caquelon (fondue pot) with a garlic clove. Mix grated cheeses with cornstarch. Heat wine until simmering, then gradually add the cheese, stirring constantly in a figure-eight motion until smooth. Add kirsch and nutmeg. Keep warm over a portable stove and dip bread cubes using long forks.
