Fricasé Paceño
A spicy pork stew from La Paz, flavored with yellow aji and served with giant white corn (mote) and chuño.

Ingredients
- Pork ribs or shoulder, yellow aji paste, garlic, cumin, giant white corn (mote), chuño, breadcrumbs for thickening.
Instructions
- 1. Boil pork with aji and spices for several hours until the meat falls off the bone. 2. Thicken the broth with breadcrumbs. 3. Serve in deep bowls with giant corn and chuño.
