Ful Medames
Slow-cooked fava beans, mashed and seasoned with cumin, garlic, and oil. Sudan's most popular breakfast, typically enjoyed with local bread.

Ingredients
- 500g fava beans, soaked overnight
- 1 tsp cumin
- 2 cloves garlic, minced
- 1 lemon, juiced
- 1/4 cup olive oil or sesame oil
- 1 tomato, chopped
- 1 small onion, finely chopped
- Fresh bread (baladi or aish)
Instructions
- Boil beans in water until very soft (about 1-2 hours).
- Drain most of the water and mash the beans lightly with a fork or mortar.
- Add cumin, garlic, lemon juice, and salt to taste.
- Serve in a shallow bowl, topped with oil, chopped tomatoes, and onions.
- Eat with warm bread.
